stop stressing By you already do sub plans

This is the key part of your post. It looks to me as if she wants sub plans that would continue learning and not be time fillers.

I think you should stop stressing. Think about what your plans for the week are and leave what a sub can do in the plans you turn in at the office. Your sub folder with the alternate plan may be all that you need.

Also if you are unsure about this you get together with the other grade level teachers and work on these together for a few weeks until you feel comfortable doing them.
