You don't have to make rules about what to include. Every one of them will be different, according to their skills and their parents participation. It does help to do a page first yourself, maybe the K teacher, and your assistant could too...and your student teacher! In the past I've also included a journal page from the principal, and one year the superintendent participated. With several sample pages already included, they will get the idea. If each child keeps the journal and mascot one night, it will still take at least a month to complete the project. That's already a long time for the last child to wait for a turn. You can always do it again with Journal #2, once its gone through once. I think its important to take a few minutes for the child to read his/her journal entry to the class the next day.
