I did my student teaching in a district that doesn't formally acknowledge any holidays at all. October 31st, for example, is 'Black and Orange Day' in their schools. To me, that seemed to be political correctness gone too far- I mean, honestly, black and orange are the colors traditionally associated with Halloween, which just happens to be on the same day!?! In the schools my kids attend, there's a full costume parade for the younger kids, but they request that party supplies have 'autumn' themes (such as leaves, pumpkins instead of jack-o-lanterns, etc.). They also ask for 'winter' themes (snowmen, snowflakes) and 'spring' themes (flowers, baby animals) instead of Christmas or Easter supplies.
