    Make as many center activities self-checking as possible, it gives kids immediate feedback and saves you time. Other centers could be more exploratory based, no need to grade those either. If the kids are enjoying what they are doing they will be more involved and you don't need papers to prove that.
    Some work done in class or homework can also be used as a basis for a discussion, again, immediate feedback and with a checklist in hand you could indicate those that "got it" and those that may need more support. Try more cooperative activities where kids can give each other feedback.
    It may take a bit more time at first to get set up, but will more than make up for the time lost to checking unnecessary "stuff".
