Perhaps your students could each make a page of a book for her about why she's such a great teacher or a book highlighting the most important thing(s) she taught them. They could write and illustrate. It would probably make them feel good for doing it and I'm sure she would enjoy this treasure forever. She could look back on it when she's been teaching for many years.
