I would recommend having the students read with a purpose - design question strips or chapter walks that align your text more closely with your state standards. In addition to some of the excellent ideas already listed, I would spice up the assignments that show what they've learned. Not every interesting or creative assignment has to be a project, some can be very short - 15 - 30 minutes long. I took a class once and the teacher said "student work is often boring because the assignment is boring, better assignments will produce better work". That has stuck with me. Have you considered using an interactive notebook for social studies?
