I just filled some this afternoon with an assortment of Halloween candy so kids can estimate each of the different items. I've also used dried beans, popcorn, bottle tops, crayons, small toy dinosaurs (a la Cam Jansen's birthday party book where they play the dinosaur estimation game), and any other small thing I can think of. My original "jar" was a baggie velcroed to an estimation board, so I stuck with smaller things.
I went to a workshop once where the instructor used a giant glass mayo-type jar and filled it with an assortment of small toys, marshmallows, etc. so I think anything would work. She was the one who gave me the idea to mix the contents and add an extra challenge. That might be a good strategy for older kids.
