How 'bout this? - distribute a handout once a week, start any day and collect 5 school days later...this would have 'reflection' or 'application' type questions based on what your class has been studying with a personal response...EX - Could a Hitler-type leader be successful today? How do immigrants today have similar problems as the Ellis Island folks in the 20th century? etc. etc. etc.
The student would write every day on the selected topic(s). When they were at the end of the 4th day - they could choose their best, neaten it up and turn it in on the 5th day for a Effort, Participation and Clarity grade - you might offer a generalize rubric...hope the suggestions are helpful.
