When I was in third grade last year, there were 5 teachers so we each took a different continent to learn about. From there the classrooms designed projects around their continent. I did Australia and we had mapping activities, student-created landmarks of Australia, we wrote stories using Aussie terms, we created t-shirts using Aborignial dot-painting. We have something called the Learning Fair, which is like an OPen House and the kids parents raved! They loved going from room to room to learn about the cultures and continents. Plus it really tied the 3rd grade as a team rather than individual classrooms.
