we publish a book with Student Treasures every year. We have done "The Tooth Extractor Gadget" where they have to write about a machine they would like to have that would pull their loose teeth. They enjoy that. We have also done one on American History, where they chose some historic figure to research and write about (probably would work better with second graders than first graders). We've done our version of a book called "Picture Perfect" where they talked about their school picture (why they liked it or didn't like it). And we've done the old standby, "What I Want To Be When I Grow Up". Good luck, I hope you find one that works for you.
