Have you thought of using a cinquain format? The poems begins with one line, naming the subject. The second line has two words describing the subject, the third has three, the fourth four, and the fifth and final line repeats the name in a new way (if the first line is Christmas, the last might be holiday or celebration). While it is a little formulated for my taste, the students can be very descriptive in their writing, especially if you brainstorm descriptives first! All of the lines are supposed to describe the subject.
