I have to agree, centers make guided reading go much more smoothly. My students have been "trained" also and know what they are to be doing during centers. For me, worksheets don't work since some of my students finish
very fast and then they constantly disrupt the others. My centers are in depth (but, age-appropriate) and usually take most students the entire center time which is 30-35 mins (the time I have to take each reading group).

If you have not used centers, I would definitely recommend giving them a try. What do you have to lose? You may grow to love them like so many of us do. There are

plenty of resources out there: books, websites, etc... look into them, it's worth it. Plus, you can have students working in a few different skills during the week, you really can differentiate their learning this way. It's a great hands-on approach to learning. Good Luck!
