How about making a patchwork quilt (red/white & blue) each patch being a book that's been read. You can just have title & author or, depending on the age of you kids, an illustrated "jacket cover".
Then of course, there's Uncle Sam, reading a list of your class's favorite books (ala Santa reading his list) all done in red, white & blue.
Or how about an American flag, with the strips being made up of squares next to each other, each with a book title. The stars could be your "star readers" (each child's name is on a star).
