I do not think that a gift exchange is a good idea for several reasons. Here are just a couple.

You do not say whether or not you are working in a Christian school. If not, as we know, in the USA Church and State are separate, and not all children celebrate Christmas. So some parents may wish their children to be excluded. Which can lead to hurt feelings.

Also this type of request can lead to misunderstanding between the parents and the school.
