While a week's notice might be enough to pull the event together, I can certainly understand why she would prefer more time to prepare. Chances are she is a busy mom who has plenty of other responsibilities besides a classroom activity. She knows that other parents would like to help and may have been able to arrange an hour or two off to spend in their child's classroom if they were given further notice as well. She probably just wants to do things well and feels pressure to do a good job on short notice. Cut her a break and next time notify her as soon as you're aware of the date for an activity/party. You'd appreciate it if someone extended the same courtesy to you.
