What grade do you teach? You could always take pictures of the students engaged in activities. The students (if they are old enough) could practice using writing skills by typing on the computer various senteces to go with the pics. They could write journal entries to go with the pictures (explain how they felt when engaged in the activity, etc.) Or you could have them reflect on the best things the class has done-such as activities, trips, special events, etc. and make it into an end of the year scrapbook. The ideas are endless! If you need more ideas, feel free to email. Good luck!
