I set up the classroom in centers and have crafts at each station. We make tissue paper flowers, clay pots, confetti eggs, god's eyes, corn husk dolls and also baskets. I got most of my ideas from an old Mailbox magazine.
I order sombreros from Oriental Trading and we make sarapes out of paper bags. I get parents to bring in crock pots of taco meat for soft tacos. I divide up the food contributions and ask for parent help for the centers. I give them a crash course of what to do the morning of the fiesta. I also have parents help me the night before to decorate and set up. The kids make cut paper
doilies ??(like retangel snowflakes) and we string them from the ceiling hanging down. I have an empty pinata for a decoration. The week before I have the kids bring in any Mexican stuff they have at home that I borrow to display around the room. The art teacher makes moroccas.

To get parent help I send home a note asking if they can come in to help or send in food or prepare crafts at home to be done in school.
All parents end up doing something. Since I have done this every year they expect it are happy to help. I even let the parents with younger sibling come. They have a fun too. I does take a lot of preparation ahead of time but the day of the fiesta I just mingle and enjoy the fun.
