This has really turned into a pain in the side, hasn't it? Next year, consider presenting the rubric the first day, and referring to it, and reminding students about it, periodically throughout the unit. I might also, if I were you, send the rubric home, with a short letter, explaining how students will be graded. You could even require the kids to return it, signed, but I don't know, that's a whole other thing to keep track of. But it might make it easier when the grades come out.

Aren't you glad that we're almost done for this school year?
