Maybe you could do something with famous people in history. Last quarter one of my guided reading groups read a non-fiction book about American female social reformers. After we read the book and learned about two social
reformers, I made a list of social reformers (American women). Each student picked a social reformer they were interested in. We researched, wrote rough drafts, and final copies.

If you are doing it as a whole class it might be better to have it be more general, like I said famous people in history. Maybe a student is interested or enjoys playing baseball, that student could research

a famous baseball player.

If someone is interested in history and government, they could research a president.

I think it would be interesting. It would offer some variety, yet still be a bit similar, which would make it easier on you.
