Poet tree idea

I'm from New Zealand, and I'm not sure how the American curriculum differs, but with my year 1 (grade 1) class, they write their own poetry by each describing an experience to me. This experience might be about the rain, the trees, the changing seasons etc. I write down the exact words they use. Children write any words they know (like 'I' or 'the'). I was surprised how creatively the little kids think.
The topic could be about a tree, flowers or nature. You could put the poem on coloured paper to make a tree or flowers and stick them on the wall.
