I would only sub - if it was not a school system that I would be doing any observations, field experience or student teaching in. You may have 49 good days of subbing and then 1 bad day - the bad day is what teachers, administrators and parents,students remember. Plus some colleges do have rules that you cannot sub in schools systems they use for your "experiences". Perhaps you could work a different type of job - but still with children - independently run daycare or such. This is just my opinion from what I have seen over many years.
