I agree that the perfectionist answer is overused. I think that the best way to handle this question is to pick something that you know you can improve on, and then point out ways that you are working on doing so. This shows that you are capable of self-assessment and also doing things to improve yourself as an educator. For example, if you know that you struggle with technology, explain that and then point out that you are taking a summer class before the school year starts.
