I went to a job fair last year. I made packets of my information for the various school districts: resume, letters of recommendation, application (if they wanted a paper copy-many want it submitted over the internet), and| reference sheet. It was crowded, but I stood in line at a few districts I was interested in. Basically I just talked to their human resources representative (some had principals). For elementary ed there weren't really any onsite interviews. Mostly I gave them the packet of information, chatted for a few minutes, and then went to the next booth. Whoever they were interested in received | | a phone call and had an interview set up at a later date. Those who did onsite interviews were schools from faraway who were in need of teachers, science teachers, and special education teachers. High need areas.I did have a pre-screening interview with a principal for one district, but they weren't hiring elementary ed teachers at that time. He called me back during the summer to come in for an interview (a few positions opened up) but I had already accepted another teaching position. I think part of the reason I had a pre-screening interview and he called me back is because my uncle coaches and teaches in that district and is pretty well known. It helped to have someone in common. I doubt by just being at the job fair anything would've come out of it. Like the previous poster said, if you can get some sort of interview or pre-screening interview (even if it's an area you don't want to work in) go for it. It's really good practice for future interviews.
