Where I sub we cannot leave during the between class time or things will come up missing from the room. That or there might be fights in the hall right by where I am to be hall monitoring. I could lock up the room and leave, but at some schools it is some distance to the staff restroom. I won't use the restrooms with the students. You never know when a child might say something happened with you in a restroom. Sad but true, you must think of all possible scenarios. I simply open the door and wait for another staff member to walk by and then ask them to watch the class for a few minutes.
