I think that a dissection of a cow's eyeball brings up a few thoughts. In my oppinion, 3rd and 4th graders are still a bit immature to gain enough from a real dissection to make it worth the "value" of a cow's body part. I recall high school expierences where teenagers where treating the fetal pigs like a piece of garbage. it is a bit of a waste and sends a bad message also. Also keep in mind that their will be many students who will be opposed to this and legally, you have to accept their right not to complete what you ask of them. I think you have a good idea but I really think that students that age will make bigger gains from using a microscope.
