What about a week-long independent project? The students can work with partners, in a group, or alone. They can choose a topic that they are interested it (doesn't have to be curriculium related, but should be related to
something educational, not tv shows, video games, etc.) The topic can be researched, and then a poster or powerpoint can be made to show what they have learned. Maybe at the end of the week parents could come and these projects could be on display. These projects will allow students to learn something they want to learn and show them that there is a lot to learning. I think often times students
are interested in the material, so they don't get as much out of it, but if they can do something that interests them, they can gain a lot of knowledge on it. If teachers also did this project, it would help to show students that even teachers learn and that teachers never stop learning either.
