Make sure you have a detailed lesson plan for the day. Make a separate sheet that details where you keep everything. We are required to have sub folders made out at the beginning of the year, and each teacher keeps them in their desk. They include, class list, seating chart, where to go for help, trustworthy students, challenging students, emergency procedures etc.

As far as that specific day. Tell the kids the day before, little ones hate change!! Tell them the teacher will do thing exactly the same schedule as you. Have work for them to do that is not too hard, and in a familiar form, ie: the type of papers or activities should be very familiar to them. Offer them a nice reward if they all respect the sub and behave well for him/her.
