What about doing a class newspaper... You could do reports on school events or get the students to be "reporters" on the school grounds during recess. You could encourage them to look for interesting stories of their school mates to write about and then publish a newspaper together. They might even enjoy doing an on-line paper. You might even be able to get a local reporter to come in an talk to the class about his/her writing process.
