I do it orally,writing down each equationon the board as the chidren give them. Teacher's I know who do have the kids write the equations just have them on loose sheets of paper. If I were to switch to writing I would use my "Math Journals" which are stapled lined paper journals. The spiral notebooks tend to get pretty messy and some 2nd graders unwind the wire.
