You might want to ask the district if they have a set way they want you to keep track of them -- then provide some examples like you said above.

In our district, we have a program called IM Series. It is a very long process
of getting everything into it (we have been working on it for 5 years) but we are finally all ready to go. Anyway, it has all of our curriculum mapped out into it. We type in our lesson plan that day...real generic and click on the standards we are teaching or testing for the day (takes about 5 minutes). Then all students are correlated to our classes that we are taught. Then if
a student is absent, it will let us know if we need to reteach it to them...it will also let us know of any accomodations needed for certain students. Anyway, to make a long story a little shorter, the district itself may have something like this that they will want you to familiarize yourself with.
If not, I would set up a database for my own classroom and check it off like you mentioned above.
