I am also and experienced second grade teacher. I teach and model to my students how to use one line to mark through a mistake. It is part of the writing process. Also, the pens are not a novelty, since they use them all the time, so they will not "mark everything out because it is getting to use the pen more"

That is my opinion. I think that it is whatever works best for the individual teacher.
