Clip to ScrapBook
I find it easiest for them to keep a "writing folder" to keep all unfinished work in. Just a simple 2 pocket folder with brads in the middle (for any editing guideline sheets to refer back to). The final text can be published in many ways. Some I keep in their portfolio to have samples (they go home at the end of the year), some I put into a classroom book, some goes home weekly, some is put on the wall in the classroom or hallway, .... I vary it depending on what they wrote about and how good it is. I like to have them use a checklist to peer edit or do self-editing, so they're sure to be thorough.

I hope that helps some. It sounds like you have some great ideas!
