After we've done all the hands on stuff with trading and using the manipulatives and we think we're ready to try it without them, I demonstrate the bottom, bigger, borrow method. On the overhead I'll show that if the BOTTOM number in the one's place is BIGGER than the top number in the one's place, I'll have to BORROW from the ten's place. The kids enjoy chanting "BOTTOM BIGGER BORROW!" With the exception of one, the entire class has caught on and are no longer using the blocks to count.
