If I had to do a rubric, I guess I would separate the standards into language arts and math, and then make a spreadsheet with the students' names on the side, with the standards on the top. One page for math, one page for L.A. In each box, I would put a "+" if the student had mastered the standard, a "-" if the student had partially mastered the standard (the horizontal bar allows you to easily turn it into a plus sign when the child has full mastery), and I would leave it blank if there is zero mastery.
