Getting meals ready

The crockpot has been my savior. I cook all kinds of things in it from chili to soups to pot roasts, you name it. I tend to stay at school until 5:30 or 6:00 PM in order to grade papers, catch up on paper work, or do lesson
plans. The last thing I want to think about when I walk through the door is what to do about supper. My advice would be to get a couple of crockpot cookbooks or, before investing in any, check out some of the online recipe sources to find a few recipes that would seem appealing to your family's tastes. I have found that using chicken thighs, rather than chicken breasts, in crockpot
meals works better because the thighs can stand up to 9 or ten hours of cooking without drying out. I usually put the ingredients together the night before and refrigerate everything, then take it out in the morning. Just don't forget to a.) plug the crockpot in and b.) turn it on. I learned the hard way about those two things!!
