I studied abroad in Sweden and enjoyed their St. Lucia Day celebrations (not actually part of Christmas but on Dec. 13th). They have a girl dress up as St. Lucia with a white robe and candles on her head and all the other kids dress up as angels. They then take rolls and gingerbread cookies to their parents and friends. You could make fake gingerbread cookies and decorate them.

Children Just Like Me- Celebrations is a book put out by Unicef that has different celebrations throughout the year in different countries.
