For math, they can make a counting down book where you copy a page with just a tree trunk and branches. The kids color them, starting with many green leaves, eventually only few fall-colored leaves, then none at all on the tenth page, | | where you can use white glitter to make snow on the branches and ground. The kids use a red stamp pad (or paint) and their fingers to make finger print apples. On the first page, there are ten apples in the tree, the second... nine in the tree and one on the ground, the third... eight in the tree and two on the ground, and so on. Then, they have a wordless book that they can take home to "read" to their family.Also in math, graphing favorite apples: red, yellow, or green. Or favorite ways to eat an apple (apple sauce, apple juice, apple pie, baked apple). For writing, you may also want to do a sensory poster for each type. Example: a poster with a big green apple in the middle and you take student ideas for how to describe it using the senses, writing their responses on the poster. They can complete a cloze writing page on their favorite color of apple and why.
