That chicken dish you described sounds like it's a variation on a James Beard classic called Chicken with Forty Cloves of Garlic (yes, you read right!). I'll see if I can find my copy of it, but basically you dump a lot of chicken, 40 UNPEELED cloves of garlic, some dry vermouth, an onion, some celery, and I think water or chicken broth in a pot and let 'er rip. The garlic roasts inside its skin and you spread the roasted garlic on bread to accompany the chicken dish.It roooocks.
