The way I use centers (I'm a newbie too!)

I use centers folders. Each child gets a folder where they have the checklist of which center they have completed and which they still need to do. They have M-Th to complete them but should average two to three a day. The centers which have a completed product will require that to be put in the centers folder. At the end of centers time, they turn their folder into the basket so I know they have completed it. As for the centers which do not require a completed product, you can usually look over and see if a child is working or goofing off.
