I don't know much about 8th graders, but what about using actual popcorn for some type of motivation. Food usally motivates everyone! Maybe you could reward your students that do well on 3 consecutive spelling tests (or however many you choose) with a popcorn treat. Just an idea. Good luck. I'm sure that you will learn a lot from the other teachers at the inservice this week. We don't go back until Aug 13th so I still have a little bit of time to plan, thank goodness! Have a great year!
