What does your curriculum specify?

I would think you'd want to keep things fairly simple with first grade.

Perhaps a comparison of the maps - look at the shape of the countries, compare the number of provinces and territories to the number of States.

Perhaps
learn a song or two from each country.

Learn about the national symbols such as the Maple Leaf and the National Anthems.

Make a few tasty treats with recipes from those two countries.

You might be able to create some crafts as well. Canada is very similar to the States, but you could for example do some sort of craft using a maple leaf shape. Mexico may be easier to find

crafts for.

I have a good section on my school's webpage just of Canadian Links - you might even want to check out the Canadian stores I have listed to see if they have any resource books on Canada listed. I know there is at least one book geared for Grade 1.

Also a few other ideas.

Study a Canadian Author
Study some Canadian Musicians, Sports Figures or Actors.
Do the same for Mexico.
