Just a couple of ideas:
-Have them write down advice for a new mom / raising children. It would probably be hilarious.
-Have them make a small quilt for the baby. They could each decorate a square of fabric using fabric markers. Then have someone sew them together to make a quilt. It would be something she would treasure forever.
-Read The Important Book by Margaret Wise Brown. Then have them write "The most important thing about Mrs. x is..."
-Instead of them writing a letter to their teacher, have them write a letter to the baby. They could tell the baby what a great mom he/she has!
