study dinosaurs if he's already an expert? (unless, of course, he'd like to do some enrichment activities/research and then share this with the class)

if he doesn't want to do dinosaurs, help him find an area he doesn't know a lot about but is interested in.

if he does want to continue working with dinos, perhaps your teacher resource center or store has information/workbooks on anthropology/archaeology..fields related to dinos. that he could look at and do some work with.
