yes, letting them know your expectations up front is important.

i let them know that the substitute will be leaving me a note with names and behaviors.

they are also aware that i will consequate their actions when i return--lovely
rewards and equally un-lovely disciplinary actions.

i've given them cookies to take to lunch, uncaffeinated pop to have at lunch, extra recess time, free assignment passes....

i've had them write apology letters, spend recess time in; i've sent behavior notes home to be signed...

(they really get the idea after the first sub of the year)

in our district, we are encouraged

to arrange our own subs when we know we'll be out--we have a binder here at school with their names and numbers. many of them have fliers and cards they hand out. most teachers i know keep a list of subs and their numbers handy in the classroom and at home--this way, we know who's coming and that they're responsible. every year, we keep our eyes out for new subs (those teachers new to our district, trying to get in and recently graduated preservice teachers) and we spread the word when someone good comes along--because if we're all using the same 2 or 3, they are harder to schedule!
