Had you considered reading folktales from different cultures? My kids enjoy books by two different authors:

Verna Aardema: Why Mosquitos Buzz in People's Ears; Who's in Rabbit's House; Traveling to Tondo; Bringing the Rain to Kapiti Plain

Gerald McDermott: Arrow to the Sun; Zomo the Rabbit; Papagayo the Mischief Maker; Raven A Trickster Tale from the Pacific Northwest; Anansi the Spider

Another author that I like to read-aloud is Tomie dePaola: The Strega Nona and Big Anthony books; Charlie Needs a Cloak; The Clown of God; Bill and Pete; Nana Upstairs and Nana Downstairs.

And. . .any of the books by Kevin Henkes are a guaranteed to be a hit!
