I would start them out with just a basic paragraph first. I would have them start with writing a Topic sentence, fact sentence, fact sentence, fact sentence, conclusion sentence. Once they get a pretty decent paragraph down, expanding that to an essay should not be a huge problem. In my experience, once kids get the idea that paragraphs need to be on a single topic, they can pretty much write what ever they need to. (Getting them to write on just one topic seems to be the hard part for my students!!:o)

Our school uses a program called "Step Up To Writing". The program is super, and really helps kids focus on what they are doing. It follows the basic 6 point paragraph idea, but uses colors to help solidify the concept.
