How about something like, what i want to be when I grow up, they can draw the picture and write the word (one word using invented spelling). Or their favorite things, their favorite school projects, what kindergarten is like, etc. something meaningful to them would be the best - why not ask them, have them brainstorm topics and make is a class project! GOOD LUCK!
