Be honest! Tell them that you are very nervous and that it would be helpful for you to take a moment to answer so that you tell them exactly what it is that you want to say. Then do it, take a moment to focus on the question and then give them your response. It might also be helpful to have your portfolio there and when possible draw the interviewers attention to it as you respond. Goodl luck!
