rhyming

When you say that your students can't rhyme, is it that they can't identify a rhyme or produce a rhyme? Rhyming is a difficult concept and I have realized over the years, that you just have to teach it repeatedly throughout the year. Rhyming should not be "taught" as a subject and then forgotten. It needs to be integrated throughout the year. It sounds like you are doing a lot to encourage rhyming in your students. My advice would be to just keep at it and eventually it will sink in with your students. If not, you should feel good that you have exposed them to an important skill that they will need when they go to first grade. Good luck!
