Eric, I recommend to collect the work unless the teacher says otherwise or you get a strong indication from the kids to do otherwise. For example if I'm passing out a science sheet
hole-punched and they all of science binders then it is usually put in there (often kids just automatically do it).
In terms of correcting, If I have a prep near the end of the day then I may correct some work if it is something easily correctable. (for example a series of math questions where there are right and wrong answers. But I'm hesistant to do this sometimes, because teachers
all have their own way of marking (do you put an X or circle it).

For this issue you have to use you judgement. For example, the day before thanksgiving I subbed. The kids had this turkey feather sheet with adding facts...the kids were pretty sure that they should hand it in, but I sent it home since it was a holiday sheet and the teacher had left it as a filler between class changes.
